The result of processing cassava, the most Brazilian of foods, tapioca starch can be classified as sweet or sour according to its acidity level. Both come from the decantation of cassava, but while sweet tapioca starch is ground and sun-dried, sour tapioca starch undergoes fermentation before the drying and grinding phase.
Tapioca starch is rich in carbohydrates, vitamin B9 (folic acid), vitamin C, magnesium, manganese, and copper. Also know that it is gluten-free and can be used in your diet without major concerns!
